Guinness Ribs with Jack Sauce

Ribs
2 Racks  Pork Ribs (baby back or full size, about 4 lbs)
6  Guinness Beers
1 cup  Beef Stock
1 tbsp (ea)  SplenDishes Steak Seasoning, Kosher Salt, Fresh Black Pepper, Crushed Red Pepper
4  Bay Leaves

Place ribs in large stovetop pan, on medium heat. Cover ribs in Guinness, stock and sprinkle in SplenDishes Steak Seasoning, kosher salt, black pepper and crushed red pepper. Boil on medium-low for about 2 hours, meat will be very tender.
Once done, remove from heat and set aside on until ready to BBQ, keeping covered

Jack Sauce
2 cups  Ketchup
1 cup   Jack Daniels
2 tsp  Dark Mustard
½ cup  Brown Sugar
4 tbsp Soy Sauce
¼ cup  Honey
4 tbsp  Teriyaki Sauce
¼ cup Red Wine
1 tsp  Sriracha Sauce (hot sauce)
2 tbsp Worcestershire Sauce
½ tsp (ea)  Kosher Salt, Fresh Black Pepper
2   Cloves  Garlic  chopped and crushed
1 Small Shallot, chopped
2 tbsp Olive Oil

Jack Sauce
In medium saucepan, heat olive oil and sauté shallots and garlic. Once lightly golden, add mustard, brown sugar, soy sauce, honey, teriyaki sauce, red wine, Sriracha and Worcestershire sauce.  Bring to a boil.
Stir in Ketchup and 1 cup of broth, ribs were boiled in, bring back to boil and reduce down about ¼, this will take about 25 minutes.
Add Jack Daniels and cook down additional 10 minutes.
Total cook time will be about 45 minutes. Makes approximately 2 cups.

Heat BBQ on high; place ribs in baking dish and baste on both sides.
Place ribs on BBQ, basting a couple of times until sauce caramelizes, approximately 5-10 minutes each side.

Serves approximately 4 people.
