Bacon, Cheddar and Pancetta Burgers

Bacon, cheddar AND pancetta.....need I say more? Not to mention, caramelized onions and homemade spicy thousand island dressing on a fresh baked kaiser roll. This beats any burger from ANY restaurant!

Let's get right to it. Pancetta is a cured Italian bacon. It's deliciously salty and full of flavor. I was able to find it already diced, which is awesome, I use this in so many dishes. Saute on medium high until lightly golden and just slightly crispy.

I'm using and 80/20 blend of ground beef. Stir in about a tablespoon of House Blend.

Don't worry I used a slotted spoon to get the pancetta out. I didn't add all that fat in! Combine well, but don't overwork the meat.

Divide into 4 balls, form into patties and sprinkle with House Blend. They will be about 1/4 pound each. Obviously those little guys aren't 1/4 pound, those are for my little Bug :)

You can't have burgers without bacon. Crisp up some bacon and set aside.

Caramelized onions will add a nice sweet element to the burgers. In the same pan as you cooked the bacon (drain some of the fat first) saute the onions with a little House Blend until golden and caramelized. A fun idea when having friends over is to have multiple toppings and set up a burger building bar, that way everyone gets what they want on their homemade burgers!

Time to grill! My husband is quite the Grill Master, these burgers were perfectly cooked to medium. Heat grill on high and sear patties for 3-4 minutes, then flip patties and cook another 3-4 minutes.

Add cheese around the last minute until melted, then remove from grill.

The burgers need to rest for a few minutes to let the juices settle. While that's happening, you can make the spicy thousand island dressing. Combine 1/2 cup mayonnaise, 2 tablespoons pickle relish and 1 tablespoon of hot sauce. If you don't it spicy, then you can use ketchup.

It's time to build our burgers!! Slather on some of that spicy thousand island dressing.

Look at that yummy melted cheese!

Ohhhhh and those caramelized onions!!

And almost last but not least, the crispy, salty bacon. Throw on some crunchy lettuce and you have a burger masterpiece!

One of the juiciest burgers I've ever had! And the Crispy Potato Wedges were the perfect side kick.

 

RECIPE

BACON, CHEDDAR AND PANCETTA BURGERS

Prep Time: 20 Minutes  Cook Time: 8 Minutes Difficulty: Easy Servings: 4

Ingredients:

  • 1 pound 80/20 ground beef
  • 4 ounces diced pancetta
  • SplenDishes House Blend
  • 1 large onion, halved and thinly sliced
  • 8 slices bacon
  • 4 kaiser rolls, sliced in half
  • 1/2 cup mayonnaise
  • 2 tablespoons pickle relish
  • 1 tablespoon hot sauce 

Directions:

Saute pancetta until lightly golden and just slightly crisp. With a slotted spoon, drain pancetta and add to burger meat. Add 1 tablespoon of House Blend and stir just to combine. Do not overwork meat. Divide into 4 balls an form into patties. Sprinkle with a pinch of House Blend. Cover and set aside.

Cook bacon slices, place on paper towel and set aside. In same pan, drain some of the fat and saute onions, adding a pinch of House Blend, until golden and caramelized.

In small mixing bowl, combine mayonnaise, relish and hot sauce.

Heat grill on high, grill burgers for 3-4 minutes on each side, adding cheese the last minute of cooking.

Let burgers rest for a couple minutes before serving to let the juices settle.

Build your burger however you want it!

Serve with Crispy Potato Wedges.
