French Toast Casserole

1 loaf French bread

8 Eggs

2 cups half and half

1 cup milk

2 tbsp sugar

1 tsp vanilla

½ tsp SplenDishes Pumpkin Pie Blend

Pinch salt

Pecan topping (see below)

Maple Syrup

Slice French bread into approximately 20 slices, 1 inch each.

Arrange slices in a buttered 9x13 baking dish in 2 rows.

In a large bowl, combine eggs, half and half, milk, sugar, vanilla, SplenDishes Pumpkin Pie Blend and salt and whisk until blended.

Pour over bread, making sure it is completely covered with the mixture.

Cover with foil and refrigerate overnight.

Spread Pecan Topping evenly over the bread and bake for 45-55 minutes until puffy and lightly golden.

Serve with maple syrup.

Pecan Topping

2 sticks Butter

1 cup light brown sugar

1 cup pecans, chopped

1 tsp SplenDishes Pumpkin Pie Blend

Combine all ingredients in a medium bowl and blend well.
