Mexican Bruschetta

3 cups Tomatoes, diced
2 Tbsp Cilantro, finely chopped
2 Tbsp Red Onion, finely chopped
1 clove Garlic, finely chopped
¼ cup Balsamic Vinegar
½ cup Olive Oil
1 Tbsp SplenDishes Mexican Blend

Combine tomatoes, cilantro, onion and garlic. Stir in balsamic and olive oil, then sprinkle in SplenDishes Mexican Blend and mix well. Let mixture sit for approximately 2 hours.

Serve with toasted bagel chips or baguette.
