Baked Ambercup Squash

November 03, 2013

Ambercup Squash resembles a small pumpkin, with its bright orange skin.  It has bright orange, buttery flesh with a dry, sweet taste.

Preheat oven to 375 degrees (f).

Cut squash in half and remove seeds.  If necessary, cut a small piece of the rounded side to make a flat surface to lay on.

Brush both sides with olive oil and sprinkle with SplenDishes House Seasoning.

Place in baking dish, open end down and bake for 30 minutes.

Flip squash over and place 1 pat of butter in center of squash.  Sprinkle with SplenDishes Pumpkin Pie Blend and brown sugar.

Bake another 15-20 minutes or until fork tender.
