Sundried Tomato & Basil Pistou

There's nothing like fresh made pesto! A PISTOU is similar to pesto, but only basil, garlic and olive oil.  I added sundried tomatoes and boy was it tasty! Tossed with butternut squash, green beans, Italian sausage and pasta, makes for a quick and healthy week night dinner.

 

SUNDRIED TOMATO PISTOU

  • 3 oz sundried tomatoes, in oil
  • 2 oz fresh basil
  • 1 garlic clove
  • Salt/fresh black pepper
  • Blend ingredients in hand blender and set aside.
  • 1 onion, chopped
  • 1 small butternut squash, chopped
  • 1 cup green beans, chopped
  • 1 tsp olive oil
  • SplenDishes House Seasoning
  • 3 Italian sausages
  • 1 cup pasta, uncooked

Sauté onion, squash, beans and garlic in olive oil until tender, seasoning with House Seasoning.

Cook pasta ask dente, then transfer with slotted spoon into squash mixture.  You want some of the pasta water to help thicken the sauce.

In another pan, cook sausage with 2oz water and a drizzle of olive oil, covered on medium heat for 8 minutes.

Uncover and continue cooking until liquid evaporates and brown sausage on all sides.  Let cool slightly, then slice and add to pasta mixture.

Fold in sundried tomato sauce heating through and re-season to taste. YUM!
