Turnip Green Gratin

Any dish with gooey cheesy goodness falls into my favorites category. So this TURNIP GREEN GRATIN definitely is a new favorite! You could use any green (chard, spinach, kale, collards etc), the turnip greens here are beautiful so I've been using them in a lot of dishes.


Makes about 4 servings
1 lb turnip greens, stems removed, chopped, blanched and drained
1 onion, chopped
3 garlic cloves, chopped 
2 Tbs olive oil 
1 Tbs flour
1/2 cup milk
1/2 cup cream
1 cup Italian style cheese, shredded 
SplenDishes House Seasoning
Pinch of fresh nutmeg

Preheat oven to 400 degrees.
In a large sauce pan, sauté onions and garlic in oil until lightly golden. Stir in flour, then milk and cream. As sauce thickens stir in 2/3 of the cheese and season with House Seasoning and nutmeg.
Fold in blanched turnip greens and top with remaining cheese.
Bake for about 10 minutes or until cheese is golden and bubbling. 
This was a holiday dish so I used the cream, but you easily lighten it up by using 1 cup of low fat milk and eliminate the cream.
