Breakfast Popovers

WOW, these BREAKFAST POPOVERS were so good! There are endless possibilities on what you could fill them with too, savory or sweet, they make a delicious brunch dish! And check out how the center hollows out when you cook them, so cool!

Makes 6 popovers
1/2 lb sausage, browned and drained
2 eggs
3/4 cup flour
1 cup milk 
1/2 cup shredded cheese
Pinch fresh nutmeg
SplenDishes House Blend

Preheat oven to 400 degrees(f).
Spray the center 6 muffin cups with butter spray.
Fill muffin cups half way (about 2 Tbs) with cooked sausage and top with cheese.
Beat eggs until frothy, then whisk in flour, milk, House Blend and nutmeg.
Pour egg mixture over sausage and cheese filling all the way to the edges.
Bake for 30 minutes.
Use knife to loosen edges and remove popovers from pan and serve hot.
