Chile Verde

January 03, 2014

Tender bites of pork, marinated in our Gourmet Blend of tomatillos, onions, jalapenos, bell peppers, cilantro, garlic and herbs. SplenDishes Verde Sauce is perfect for a slow cooker meal.  An easy week night dish, prep it in the morning and come home to a delicious smelling house!

Let's start with the star of the show.  SplenDishes Verde Sauce.  This Award Winning, deliciously zesty sauce is made with fresh tomatillos, onions, bell peppers, jalapenos, garlic, cilantro, cumin and oregano.  You can find it in the SplenDishes Gourmet Store.

Since your sauce is already made, you don't need many ingredients.  Some fresh onion, garlic and parsley.  I served this over steamed rice and homemade tortillas (you can find recipe under "Simple Sides").

Pull out your crock pot.  You can get this ready the night before and just keep the insert in the fridge and set it on low when you leave in the morning.  Pork and chicken both are great with this sauce.  I prefer pork, so I use whatever roast I can find on sale. Since its slow cooking, you can use a tougher, less expensive piece and it will still be fall apart tender.  Cut it into 2" cubes and throw it into the pot.

Chop onion and garlic and toss that in.  I like leaving the parsley whole, then you can just pull out the stems later, but you can also chop it and toss it in.

Pour in your Verde Sauce, sprinkle about a teaspoon of SplenDishes House Blend and an extra pinch of red pepper flakes. Give it a good stir and put the lid on.

Set it on low and GO!  Let it cook for 6-8 hours on low.  I cooked mine for 7 hours and the meat was melt in your mouth tender.

I took a peek at about 5 hours in and gave it a stir.  By now the house is smelling heavenly.......

7 hours later, here it is.  Ready to be devoured!  Your rice should be done and tortillas warming :)

Spoon pork and lots of delicious sauce over rice and eat with tortillas.
