Mozzarella and Basil Stuffed Chicken

Ooey, gooey cheese? Yes, please! With just a few ingredients from the fridge this boring chicken breast became fabulous. A little bit of mozzarella, fresh basil and SplenDishes Super Tuscan Blend and that's it!

Literally, just shredded mozzarella and chopped fresh basil. Mix them together.

Using a small sharp knife, make a pocket in the chicken breast and stuff as much of the cheese mixture in there. Secure shut with toothpicks.

Drizzle with olive oil and coat generously with Super Tuscan Blend and a pinch of salt. Roast in 400 degree(f) oven for about 30-35 minutes or until chicken is cooked through.

I can't get enough of that oozing cheese.......!!

Preheat oven to 400 degrees(f).

Using a small sharp knife, make a pocket in each chicken breast. Stuff 1/4 cheese mixture into each breast and secure shut with toothpicks.

Drizzle with olive oil and sprinkle generously with Super Tuscan Blend and a pinch of salt.

Bake chicken for 30-35 minutes or until cooked through.
