BBQ Yogurt Chicken

My fresh herbs were on their last leg, so I thought it would be perfect to use them up in this delicious yogurt marinade recipe from Shonal's Kitchen Cookbook. Its healthy and so simple and can be done the night before. The yogurt makes the chicken super moist and juicy and the herbs and spices give it such fresh and unique flavor.

Im using Greek yogurt, which is nice and thick, fresh chopped flat leaf parsley, rosemary and garlic. For spices, I love cumin, House Blend and fresh red pepper flakes. Combine in a large bowl or ziplock bag.

Add chicken to mixture and coat well. Let it sit as long as possible, even overnight. This is a great dish for large groups of people too, you can marinate it the night before and then just grill it off right before everyone gets there and keep it warm in the oven.

Grill on medium high heat for about 5-6 minutes per side or until chicken is cooked through. It comes out super juicy and really tasty with those herbs and spices!

 

RECIPE

BBQ YOGURT CHICKEN

Prep Time: 10 Minutes  Cook Time: 12-15 Minutes Difficulty: Easy Servings: 4

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups plain Greek yogurt
  • 1/4 cup flat leaf parsley, chopped
  • 1/4 cup rosemary, chopped
  • 4 garlic cloves, chopped
  • 1 tablespoon cumin
  • 1 tablespoon SplenDishes House Blend
  • 1/2 teaspoon red pepper flakes

Directions:

Combine yogurt, parsley, rosemary, garlic, cumin, House Blend and red pepper in large bowl or ziplock bag.

Add chicken and marinate for 30 minutes and up to 24 hours ahead (the longer the better).

Grill chicken on medium high heat for 5-6 minutes on each side or until chicken is cooked through.
